Tanzanian Salad (Swahili Kachumbari)
This is Tanzanian -Swahili side dish -salad recipe from Fatherhood Life Blog. It is simple, easy to make and healthy side dish that fathers can make to cheer up family meal. I guarantee you that kids and guests will always remember this kind of dish, or side as you may call it. It goes well with chicken/beef sauce with rice, Pilau/Swahili-Tanzanian spice dirt rice, Ugali-Tanzanian main food made from maize stiff porridge like (Fufu as West African calls it), and Machalari- Moshi Kilimanjaro Chagga people main dish made of Banana and beef.
6 people serving.
Ingredients:-Half of lettuce/cabbage head,
-Five thinly sliced tomatoes,
-Three tea spoons of wine or white vinegar,
-Two thinly sliced medium sized onions,
-One tea spoon of salt,
-Half thinly sliced red pepper,
-Half thinly sliced green pepper,
-Or one green/red pepper,
-One cucumber thinly sliced,
-One cup of thinly sliced and finely chopped coriander,
-Five tea spoons of virgin olive oil,
-Three table spoons of juice of 1 limes or lemon if preferred,
-One and a half tea spoon of black pepper,
-Two thinly sliced carrots (optional),
-One thinly sliced hot pepper (optional).
Method:
Method one: Place the sliced lettuce/cabbage, coriander, onions, cucumber, carrots, red/green pepper and tomatoes, into a large serving bowl.
Method two: Mix together by adding to the method one mixture the lime juice/lemon, salt, vinegar, hot pepper (optional) and salt.
Method three: then toss or stir this mixture until all the ingredients are well mixed. You can season Kachumbari with additional salt and freshly ground black or black pepper as you see fit. Serve effective immediately. Left over can be refrigerate to preserve freshness. Thanks for Kilimanjaro and Northern zone weather because it is cool therefore this dish lasts longer than coast area where it is warmer. This is indeed Swahili traditional side dish, or you may call it "Swahili Salad-KACHUMBARI" from Tanzania. Enjoy this simple, delicious and easy dish.
